We, Francesco and Matteo, respectively the innkeeper and cook of the Osteria, will make you spend pleasant moments while enjoying our dishes. We like, jokingly but not too much, to define ourselves in this way by recalling traditional Italian definitions that do not detract from our culinary and hospitality skills but that better reflect our idea of catering.
Matteo Caccavo
Matteo, born in 1995, was raised in Borgo San Lorenzo, an important Mugello town that holds many secrets and produces many ingredients of Florentine cuisine and Florentine history.
He attended the Buontalenti Hospitality Institute in Florence with passion and excellent results and once he finished his studies he moved to the city to be able to put to good use what he learned.
Although very young, he boasts experience in well-known city restaurants where, in addition to meat, he has had the opportunity to try his hand at vegetarian and ethnic cuisines, with very intense work rhythms and kitchen brigades from different origins. In addition to the Florentine experiences, in his baggage he also carries a one year spent in Spain, in Seville, where he acquired important experiences for his professional and human growth.
These years have consolidated in him the passion for cooking and the ingredients of his territory of origin to which he had been introduced by his maternal grandmother. Having treasured this essential knowledge and acquired the necessary professional skills, today it is able to bring the right amount of contemporaneity to traditional cuisine, seasoned with the humility of those people who never want to stop growing and learning.
Francesco Carzoli
Francesco, born in 1975, is originally from Castelfiorentino, the last Florentine bulwark in Valdelsa and which, from Florence, carries the Lilly on the city coat of arm.
Graduated in foreign languages and literature, at the end of his studies he starts working at the family ice cream shop where, in addition to the service and hospitality, he also deals with production, immediately understanding the importance of the quality of the ingredients.
The deep bond with the territory is also increased thanks to the long periods spent, between grandparents and maternal uncles, in the countryside surrounding the Florentine hills that have left him indelible family memories together with the knowledge of ancient and genuine flavors and aromas.
After other years of experience in well-known and important realities between Florence and London, he decided to go back to the only path that reminded him of that authentic and true Tuscany. A path that brings genuine ingredients back to the center of attention and that promises to bring you, its guests and never customers, straight to his heart and to that of the Osteria.
