Although our identity is strongly linked to Tuscan cuisine, we believe biodiversity of our country is an invaluable resource deserving to be remarked.

 

 

As a result of this thought comes the idea of organizing, on Sunday at lunchtime, Italia Enogastronomica. A series of recurring events bringing the flavors of Italian regions to our guests’ attention. 

Every tasting itinerary is characterized by dishes, ingredients and wines strictly coming from each proposed area. Every event will also see the presence of trusted winemakers willing to tranfer their knowledge to anyone at the tables. 

All this in order to make guests feeling the atmosphere of a familiar, informal italian  Sunday lunch.

For this last trip of the season, we will take you back to a place that has made its food and wine traditions one of its world-renowned excellences. We will take you to the north-eastern part of the province of Cuneo, on the left bank of the Tanaro River, in a territory of irregular and jagged hills, with alternating deciduous forests, chestnut groves and orchards. Welcome to Roero. Wilder than Monferrato and less well known than Langhe, of the three sites in Piedmont elected UNESCO World Heritage Sites in 2014, it is undoubtedly the most unspoilt but also the most surprising. It looks like something out of a fantasy saga, with medieval castles perched on rolling hills, nestled between deep canyon-like gorges. Carved out by erosion, the extravagant shapes of the Rocche are a wonder that alone is worth the trip. A cyclopean natural architecture, created thousands of years ago, which cuts through the green of the woods with blades of golden sandy soil. Culinary delights and historical riches come together in lands that were once the sea. Excellent products that will be presented to us by the Bruno Franco company and its young owners, who have made this area their home and jealously guard its traditions. A journey through food and wine that will surprise you once again.

During the carnival season, we couldn't help but introduce you to a land where this tradition has ancient origins that remain intact to this day. Few places like this preserve the traces carved in granite by the people who lived many millennia before us. Menhirs, inscribed stones, nuraghi, but also ancient Roman roads, sacred springs and medieval remains coexist in a place suspended in time. Mamoiada is located in the innermost part of Barbagia di Ollolai, in a region of central Sardinia that extends along the slopes of the Gennargentu massif. It is an area where numerous waterways flow, feeding lush forests, pastures and vineyards, which produce excellent cheeses and wines that make the land of the Mamuthones and Issohadores even more famous. A glance at the countryside immediately reveals this land's vocation for quality production: vineyards as far as the eye can see, pastures and woods nestled among the high hills that lie at the edge of the Gennargentu. A territory rich in water and greenery in every season, at the ideal altitude for the high-quality production that has always characterised it. Your guide on this special Sunday will be the youngest member of the Sedilesu family, Andrea, who, with his family's long history in the area, will help you appreciate every aspect of a traditional Barbaricina Sunday lunch. With the cold weather approaching, we want to take you, body and mind, to one of the most beautiful corners of our peninsula, less known to most but with an irresistible charm: the Costa dei Gelsomini, which stretches from Punta Stilo to Capo Spartivento. Characterised by clayey-marmose hills and green terraces rich in citrus groves and olive trees that reach the heart of the Aspromonte National Park, Greek colonists chose it for its strategic position, and their ancient colonies of Locri Epizefiri and Kaulon stand at the centre of an area also characterised by the ruins of ancient castles, monasteries and villages perched above a picture-postcard sea. The cuisine is based mainly on genuine, organic local produce and attracts numerous tourists and visitors. It preserves many products and recipes from the typical local cuisine, which are part of that ancient cuisine. Accompanying you on this journey is the Aspromonte winery, represented by its owner Pasquale Polifroni, who will help you experience the excitement of his wines and his land with unusual pairings and intriguing dishes, without ever leaving Florence.

On this occasion, which marks the beginning of the new year, we will travel north to discover a less famous but equally interesting part of Friuli from a food and wine perspective: Grave. The entire plain was formed by the flooding of the Meduna, Cellina and Tagliamento rivers, which, over the millennia, deposited enormous quantities of limestone and dolomite material torn from the mountains by the violence of the waters and carried downstream along their riverbeds. These same mountains, in addition to giving rise to the “Grave” soil, also shelter it from the cold winds coming from the north. All this, together with the beneficial effect of the Adriatic Sea, has contributed to the creation of a climate particularly suited to the cultivation of vines. History has also characterised the cuisine of this land, which has its roots in peasant traditions, to which are added the contributions of peoples and traditions that have also influenced the dishes. Simple cuisine, linked to the customs of the past, which maintains its peasant and healthy spirit, capable of conquering even the most refined palates. The combination of these ingredients gives rise to skilfully revisited dishes and recipes, in a highly successful blend of tradition and modernity. The Antonutti family, who have been guardians of this territory, its vineyards and its food specialities for over a hundred years, will tell you all about it. A journey marked by influences and traditions that we have no doubt will amaze and delight you.

For this third stage of the season, we will have to embark, by ship or plane, to reach a corner of the beautiful and unspoilt land of Sardinia; the Sulcis-Iglesiente area, first favoured by the Phoenicians and Carthaginians who discovered the rich mineral deposits underground. Wild nature, tunnels overlooking the sea, ruins emerging from the waves and fishing villages overlooking crystal clear waters. Despite the proximity of the sea, most of the typical dishes derive from an agro-pastoral economy based on transhumance for millennia, which remains one of the main sectors of food and wine production. The area is also rich in other specialities, the result of past influences and traditions handed down over the centuries. The only exception to the products of the land is tuna fishing, which was already practised in the Nuragic era. Accompanying us in their territory is the historic Cantina Santadi, which has made Carignano, a privileged variety in the area, one of its main strengths. There will be no shortage of dishes resulting from the aforementioned influences and the desire to satisfy your every curiosity.

For this second stage of the season, we will cross the southern border of Tuscany by a few kilometres and head for Lake Bolsena or Vulsino, in the Maremma region of Lazio. With an area of over 115 square kilometres, it is the largest volcanic basin in Italy. The lake is one of the main economic resources for the entire Tuscia region. From fishing to tourism and, more recently, viticulture, the presence of the lake has made this land great, providing the raw materials that represent the gastronomic identity of this place. Accompanying you on this stage is a young winemaker from Gradoli, Andrea Occhipinti, who produces interesting wines based on Aleatico and Greco Nero grapes on the shores of the lake. These wines pair perfectly with the combination of fish and meat that make up the menu, which is traditional yet unusual and intriguing. All you have to do is “dive in” to this wonderful opportunity to rediscover a territory whose roots go back to prehistoric times.

For the start of this new winter season, Italia Enogastronomica remains focused on southern Italy, taking you on a journey through the historic region of Irpinia. Bordered by the Daunia mountains to the north-east, the Vulture mountains to the south-east and the Picentini-Partenio mountains to the south-west, the north-western edge is marked by a complex river system shared with the Sannio Beneventano area. Given its particular conformation, agriculture has always been a very important part of the territory and with it comes a considerable production of quality wines, as well as hazelnuts for the preparation of the many versions of the famous nougat. As always, we will present a menu focused on the truest tradition, which will enhance the estate's labels, based on Fiano Greco di Tufo and Aglianico, to the best of their ability, in the company of the owner of Tenuta Cavalier Pepe.

In these last trips of the 2024/2025 season of the ‘Italia Enogastronomica’ series, we will take you to the South. We will continue our journey at the end of the month, Sunday 30 March, with the destination set on the Tavoliere and Gargano to discover the province of Foggia, which reminds us and puts us in the mood for long days and summer holidays. An area that has handed down its history since the dawn of humanity and that brings to the present day dishes and ingredients that make it one of the excellences of our peninsula. Cheeses, legumes and meat, rather than fish, denote its rural connotation that finds one of its most modern outlets in the cultivation of vines. In this key, we propose an unusual pairing with a company that produces traditional wines and innovative versions made from those grapes that are the expression of that territory; Bombino Bianco and Nero di Troia will be the masters and Pisan-Battel, in the person of Antonio Pisante, will be able to tell you every aspect of its production philosophy.

In these last trips of the 2024/2025 season of the ‘Italia Enogastronomica’ series, we will take you to the South. Sunday 02 March will be dedicated to an area that is currently enjoying a notoriety that unfortunately does not concern the aspects we hold dear. The Campi Flegrei are a great caldera, even submerged, in a state of semi-dormant. From the Posillipo hill to the Camaldoli hill via the Cuma mountain and the Procida mountain, this partial activity generates a unique territory rich in particularly recognisable raw materials. An area as large as our Florentine area, where these products form the basis of a millenary agrifood culture that features iconic dishes and lesser-known family recipes. Accompanying us on this journey will be a custodian of those traditions, Salvatore Martusciello, who with his wines will be able to tell you every detail of the marvellous setting in which he operates and produces fantastic labels that will best accompany the dishes on offer.

Back from the Christmas holidays, for those of you who still yearn for the mountains, we propose another leisurely trip to Trentino, this time to the foothills of the mountains, where popular traditions go hand in hand with imperial references to the Austro-Hungarian period. We will offer you a menu composed of ingredients rich in tradition but poor in extraction, of iconic but less emblazoned dishes, all to give you a taste of a Trentino that, especially at this time of year, evokes in each of us a longing for snow and alpine huts where you can enjoy all the delicacies we propose. And we will take you there, without moving you from Florence, for a relaxing and satisfying Sunday round trip. The menu will be accompanied by the labels of the Klinger winery, which, between Lavis and the mountains, produces wines closely linked to the territory that will amaze us and best accompany the dishes on offer. Moreover, as always, people from the winery will know how to satisfy all your curiosity and questions about the territory and its traditions.

This month's event, anticipating Christmas holidays is dedicated to one of the most iconic regions of the Italian food and wine tradition. We will accompany you on a Piedmontese Sunday, on the border between Liguria, Emilia Romagna and Lombardy, certain to leave you amazed by the incredible offer of the Colli Tortonesi. Great white wines, even those that can be aged for a long time, red wines with great character and a menu which, as always, will allow you to savor the true tradition of a place a little off the main tourist routes. All accompanied by an exceptional guide: the Mariotto family who, for some decades now, have been one of the best-known realities of this southern part of Piedmont. A journey that starts from your home and arrives at ours, passing through the Romanesque Derthona and always without leaving Florence.

So here you are in the southernmost area of Trentino, between Val di Non and Valsugana, among grapes and apples, wine, spirits and polenta. A rich and dense menu of well & less known and dishes that will give you the emotion of an authentic, engaging and satisfying culinary experience. The wines are from Villa Corniole and the property itself will be with us to tell you about them and make you appreciate them, both for their combination with the menu and for their particular characteristics. A story, that of their family, closely linked to the tradition of the territory they represent, made up of typical dishes and convivial family moments interpreted by our way of cooking and our friendly and welcoming mannars that contribute into making our guests feel at home. This Italia Enogastronomica event also points North but changes the quadrant, pushing us West. We present a territory that, alongside other more famous ones, does not disfigure even a little; neither at landscape nor in terms of food and wine. Between Langhe and Monferrato, the Asti cuisine that we offer is still home-made, traditional and a little rustic but capable of giving nose and mouth an experience that will never be forgotten. Truffles, mushrooms, rice and red meats cooked by our chef Matteo Caccavo will take you to the middle of Piedmont without leaving Florence. The wines of the Crolin company, described by the producer, will surprise you with their elegance and drinkability and will perfectly accompany another Sunday lunch to rediscover our splendid Italy.

Let's start again after the summer break with our "Italia Enogastronomica" themed Sundays heading not far from where we left off. In a tribute to a land that has always made gastronomy one of its strong points and which has suffered incalculable damage from recent natural events, we will guide you to rediscover the cuisine of the Ravenna and Apennines. As usual we offer a super traditional menu, a Sunday lunch between sea and land which, as always, will catapult you into Romagna without leaving Florence. An unusual and curious experience that includes the wines of the Tenuta Bulzaga in Brisighella. Native varieties only that produce excellent quality wine which, described by the producer, will be appreciated for the perfect pairing with the dishes cooked by our chef Matteo Caccavo.

The new event in the Italia Enogastronomica series sets precisely over that territory, the hills of Bologna and the splendid city itself, close and distant to us at the same time. As usual we will take you there, without leaving Florence, but making you perceive the smells and taste the flavors of home cooking and the wines of our partner, which on this occasion will be Tenuta Bonzara di Monte San Pietro. A succulent Sunday lunch, where conviviality pairs super typical dishes along with less famous wines that have nothing to envy of better known labels and denominations, in Emilia as in every corner of our beautiful and unique Italy.

The day will be enriched by important SlowFood products and the excellent wines of the D'Angelo winery, which for more than 150 years has carried the name of Lucanian oenology high in Italy and around the world. Our journey, rediscovering the regional cuisines of Italy, this time brings back to light a territory that has always been rich in history and traditions, not least those of wine and oil. Rome, with its eternal charm and its popular dishes, and the South-West, with the part most linked to agriculture, form a combination that could only become one. We will present you, as on any other occasion, our selection of traditional but always unusual and curious dishes that will make you spend a Capitoline Sunday without leaving Florence. On this occasion, our friends of “il Caffè del Cardinale” in Giulianello in the province of Latina collaborate with us in preparing the four hands menu. We will accompany every dish with the great wines of Marco Carpineti, narrated by the producer, historian and visionary, who will be able to make you appreciate the gastronomic pairing to the fullest.
